Cooking Light: Healthy Chicken Recipes

Love fried chicken, but hate feeling guilty after eating it? Well, put an end to that and try our healthy recipe for fried chicken.

Ingredients:

  • 1/4 cups bagel chips or Melba toast
  • 1/3 cups rice-corn crispy cereal
  • 2 teaspoons kosher salt 4. 1/2 teaspoon cayenne pepper
  • 1/2 cup light mayonnaise
  • 1 teaspoon Dijon mustard

 
Step 1.
First, finely grind the bagel chips and cereal together in a food processor. Then, transfer the crumbs to a plastic bag. Add the oil, salt, cayenne,  and toss to mix thoroughly. Once you are done with mixing, whisk the light mayonnaise and Dijon mustard together in a bowl.

Step 2.
Add the chicken to the mayonnaise mixture. Drop the chicken into the plastic bag, seal, and shake until each piece is evenly coated. Place the pieces on the prepared rack. Spray the chicken pieces evenly with cooking spray.

Step 3.
Bake until the coating browns.
